Every 90 days I do a cleanse. It’s a 10-day thing. No dairy, no sugar, no white carbs… but it’s worth it. No, really, it is. Besides, that’s not the point of this post.
The point is, my lunch tastes better than yours. Most days anyway. And it’s healthy and clean. Today I had turkey meatballs and a spinach salad. Don’t knock it until you try it:
Paleo Turkey Meatballs
Yield: 16 meatballs
1 lb ground turkey
1/2 cup almond flour
2 eggs
1 small-medium sweet onion, grated
1/2 cup baby carrots, grated
3-4 cloves garlic, minced
1/2 cup parsley
1/2 cup fresh basil
no salt seasoning
- Preheat oven to 350.
- Prepare vegetables: peel the onion and grate. Grate the carrots. Finely chop parley and basil. Mince garlic.
- Add ground turkey to a medium sized bowl, add onions, carrots, parsley, basil and garlic. Season with no salt seasoning.
- Beat the eggs in a separate bowl and add them to the meat mixture.
- Add the almond flour and mix everything together.
- Form meat mixture into 16 evenly sized meatballs.
- Spray a cookie sheet with olive oil cooking spray and evenly distribute mealballs.
- Bake for 35-40 minutes.
I made a sauce to go over mine:
1/4 cup honey
2 Tbsp Dijon mustard
1 tsp curry powder
Mix ingredients together, warm in the microwave and pour over meatballs. That’s enough for all the meatballs. Don’t go crazy just because it’s clean…
